When Bill and Emily started baking sourdough bread out of their apartment in 2021, they had no idea it would lead to owning one of Casper’s most beloved neighborhood markets. What began as True Bakery - born from a leap of faith after Bill was unexpectedly let go from his position as a hotel food and beverage director - quickly blossomed into a passion for creating food the right way. From that humble kitchen, a philosophy was born: take no shortcuts and serve every guest as if they were family.

That same philosophy now fuels Grant Street Grocery & Market, which the couple acquired in January of 2025. Under the umbrella of True Bakery, Grant Street has been reimagined as a community hub where families can slow down, share a meal and feel right at home. Whether it’s house-made deli meats and condiments for the sandwiches to chef-curated meals and pastries, Bill and Emily are committed to raising the bar for food service in Casper.

For Emily, the store holds deep personal significance. She grew up just a few houses down, spending countless afternoons walking over for a snack or setting up lemonade stands out front. The original owners knew her by name and treated her like one of their own, even once taking her cat to the vet when her mom was at work. It’s that sense of community and care that she hopes to pass on, creating a place that’s just as meaningful and memorable for the next generation of kids as it was for her.

Family truly is the heart of their operation. The couple, along with their daughter and soon-to-be baby boy, are building a business that reflects the care they put into their own home. “We want this space to be a place where families gather, where kids can enjoy an ice cream cone on the patio and where folks can grab ingredients for meals they’ll share around their own tables,” Bill says.

In a world full of shortcuts, Bill and Emily are choosing the long way through homemade stocks, hand-sliced meats, fresh-baked bread and ice cream made from cream, not cartons. Their True Food Philosophy is what sets them apart and what they hope to share with more people in the years to come. Because to them, success isn’t measured in profits; it’s measured in the joy of serving their community, one scratch-made bite at a time.
